Inside a Cacao Fermentation Box: The Five Days That Decide What Chocolate Tastes Like

Crack open a cacao pod and taste a seed straight from the white pulp, and you will get a mouthful of sweet, sour fruit around something bitter, purple and astringent that tastes nothing at all like chocolate. The seed is not chocolate yet. It becomes chocolate over the next week, on the farm, in a wooden box, through a fermentation run by wild yeasts and bacteria, and everything a bean-to-bar maker does afterward, roasting, grinding, conching, can only work with what those days created. Fermentation is the least visible step in chocolate and the one that decides the most. This is what happens inside the box, day by day, and why the makers whose bars we stock fly to farms to watch it.

Day zero: the harvest

Pods are cut from the trunk with a machete, opened, and the seeds scooped out with their pulp, thirty to fifty per pod. The pulp matters: it is sweet, acidic and full of sugar, and it is the food the fermentation runs on. Seeds are gathered from many trees over a day or two into a single batch, and the batch is either heaped on the ground under banana leaves, the traditional method across West Africa and much of Latin America, or loaded into a wooden box, often one of a tiered set with holes in the bottom for drainage. Boxes are what most quality-focused farms and cooperatives use now, because they let the fermenter control depth, temperature and turning.

Days one and two: the yeasts

Within hours, wild yeasts on the pulp and the box begin eating the sugar and producing alcohol and carbon dioxide, exactly as in a wine fermentation. The pile is dense and airless, the yeasts thrive, and the pulp begins to liquefy and drain away as "sweatings." The temperature rises toward 100°F. Nothing much has happened to the seed itself yet; it is still alive, still purple inside, still able to germinate. This stage produces the fruity, alcoholic aromas that some of them will carry into the chocolate.

Day three: the turn

As the pulp drains, air gets into the pile, and the fermenter helps it along by turning the mass, shoveling it into the next box or mixing it by hand. Oxygen changes the population. Lactic acid bacteria have been working alongside the yeasts; now acetic acid bacteria take over, converting the alcohol into acetic acid in a reaction that gives off a great deal of heat. The pile climbs to 115°F and sometimes 125°F, and the smell turns sharp and vinegary. A fermentation box on day three smells like a cider press left in the sun.

Days three to five: the seed dies

The heat and the acetic acid soaking into the seed kill the embryo, and that death is the moment chocolate flavor becomes possible. Inside the dead seed, the cell walls break down and enzymes go to work on the stored proteins and sugars, producing the amino acids and reducing sugars that will later, in the roaster, react to form the hundreds of compounds we recognize as chocolate. The bitter polyphenols that made the raw seed astringent are oxidized and bound up, browning the seed from purple toward the familiar brown. Cut a seed across on day four and the interior shows the change: the purple fades, brown creeps in, the inside cracks into a marbled pattern. Fermenters do exactly this, cut-testing seeds every day.

Days five to seven: judgment

When to stop is the fermenter's decision and it is where the craft lives. Too short, and the seeds stay purple, bitter and astringent; the chocolate will taste harsh and flat no matter how it is roasted. Too long, and putrefactive bacteria move in, producing the hammy, cheesy, ammonia notes that mark an over-fermented bean. Varieties differ: the delicate Criollo types ferment in three or four days, the robust Forastero in six or seven, with Trinitario in between. Climate, box size, pulp sweetness and the season all shift it. A good fermenter judges by the smell of the pile, the color of the cut seed and the temperature curve, and stops the fermentation by spreading the seeds to dry.

Drying: the second half

The seeds go onto raised beds, patios or racks and dry in the sun for a week or two, turned regularly. Drying is slow on purpose. Some of the fermentation reactions continue in the first days of drying, the acetic acid evaporates, and the seed's moisture drops from about sixty percent to seven. Dried too fast, in a mechanical dryer or a fierce sun, the seed stays acidic and the acetic notes never leave; dried too slowly in the rain, mold gets in. Once dry, the beans are bagged, and only then do they leave the farm for the maker.

What it tastes like in the bar

Every craft chocolate we carry is a report on somebody's fermentation. A bar with bright red fruit and a clean finish, the classic Madagascar profile, came from a well-run, moderately short fermentation that kept the fruit. A bar with deep nutty, earthy, caramel notes came from a longer, fuller one. A bar that tastes sour and sharp was dried too fast or fermented too short; one with a hammy, smoky edge, sometimes prized in certain origins and faulted in others, went long. This is why bean-to-bar makers like Dandelion, Dick Taylor and Friis-Holm buy from specific farms and cooperatives rather than from the commodity market, pay for fermentation done well, and often work with the farm on box design and turning schedules; some publish their fermentation protocols with the bars. Why it happens on the farm

Fermentation has to begin within hours of the pod being opened, before the pulp dries or spoils, which means it happens where the tree grows, thousands of miles from any factory. That geography is why quality chocolate depends on paying farmers well: the most skilled and least visible work in the whole chain is done by the people with the least power in it, and a maker who wants great beans has to make it worth a cooperative's while to ferment carefully instead of quickly. When a craft bar costs what it costs, a fair share of that is the box, the banana leaves and the person who knew when to stop.
