Browning, Explained: The Two Reactions Behind Flavor, and How to Get More of Both

Brown food tastes better, and there are exactly two reasons why. The first is a reaction between proteins and sugars that happens above the boiling point of water and produces the crust on a steak, the color of bread, the smell of coffee and the flavor of chocolate. The second is what sugar does on its own when it gets hot enough, which produces caramel and the dark edge of a roasted onion. Cooks call both "browning," and they are different reactions with different rules, and the rules are what let you get more of each on purpose. This is the science in plain terms, the conditions that make each happen, the reasons things refuse to brown, and the shelf's part in it.

The Maillard reaction

Named for the French chemist who described it in 1912, the Maillard reaction is what happens when amino acids, the building blocks of protein, meet reducing sugars under heat. The two combine and then cascade through hundreds of further reactions into thousands of new molecules, brown pigments and volatile aromas among them, which is why a seared crust smells of so many things at once: meaty, nutty, toasty, savory. It begins slowly at moderate temperatures and runs fast above about 285°F (140°C), which matters because water boils at 212°F and cannot get hotter. Anything wet, therefore, cannot brown until the water is gone. That single fact explains most browning failures: a crowded pan of mushrooms that steams gray, a steak straight from the fridge with a damp surface, a sheet of vegetables packed edge to edge. Dry the surface, give it space, use enough heat, and Maillard begins.

It also runs faster in an alkaline environment, which is why a pinch of baking soda browns onions in half the time (and turns them soft, so use it only for a purée or a soup), why pretzels are dipped in lye before baking, and why Dutch-process cocoa is darker than natural. And it runs on the sugars present, so a rub with a little sugar in it, a glaze of honey or maple, or a piece of meat with its natural sugars intact browns deeper and faster; our maple guide uses this in every glaze.

Caramelization

Caramelization needs no protein. It is sugar alone, breaking down under heat into hundreds of new compounds, from the buttery diacetyl to the nutty furans to the bitter ones that arrive if you go too far. It starts at a higher temperature than Maillard, around 340°F (170°C) for table sugar, and it moves through stages a cook can see: clear syrup, pale straw, amber, deep amber, and then smoke and bitterness. How to get more of it

Dry. Pat meat and fish dry; salt them ahead so the surface dries in the refrigerator, per the salting guide; dry vegetables after washing. Hot. A pan that is properly preheated; an oven at 425°F for roasting rather than 350°F; a broiler for the last minute. Space. One layer, nothing touching, in batches if you must; crowding makes steam and steam makes gray. Fat. A film of oil conducts heat into every point of contact and carries the browned flavors; a dry pan browns unevenly. Sugar. A little in a rub or a glaze, honey brushed on in the last ten minutes, a spoon of maple in the marinade. Time. Leave the steak alone; the crust forms when you stop moving it. Alkalinity, sparingly, as above.

The shelf is browning, done already

A great deal of what a fine food pantry sells is browning captured in a jar. Roasted cacao is Maillard in a bar, and the roast profile is the maker's choice about how far to take it, as our bean-to-bar piece describes. Dulce de leche is milk proteins and lactose run through Maillard and caramelization for hours; caramel is caramelization stopped at amber; the caramel guide keeps the two apart. Dark maple syrup, cooked longer, has more of both. Smoked paprika, toasted sesame oil, brown butter, coffee, black tea, aged balsamic, malt: all of them are browning reactions that happened before you bought the jar, and they can be added to a dish as a shortcut to depth that would otherwise take an hour in a pan. A spoon of dark maple in a braise, a little dulce de leche in a coffee, a drop of aged balsamic on a pale sauce: each adds the flavor of browning without the browning.

When browning goes wrong

Too far, and both reactions turn bitter and acrid; burnt is the same chemistry gone past the point of pleasure, and it cannot be undone, as the diagnostic says plainly. Too little, and food tastes of what it was rather than what it could become, which is the most common flaw in home roasting: a pale chicken, gray mushrooms, a soft-edged tray of vegetables.
